Meet Cooper's Cask Coffee
Cooper's Cask Coffee began in 2014, when coworkers John Speights and Jason Maranhao tried a barrel-aged coffee that disappointed them and decided to do it better. With an empty whiskey barrel from a friend's distillery they started experimenting, and by 2016 the business was up and running in East Greenwich, Rhode Island. Green coffee rests in used bourbon, whiskey or rum barrels for about a month, soaking up the spirit and the oak, and roasting drives off the alcohol while keeping the flavor.

A 1:2 dose-to-yield ratio is a common place to start. Adjust grind and taste — the roaster’s own guidance always wins.
