Meet Canyon Coffee
Canyon Coffee was founded in 2016 by Ally Walsh and Casey Wojtalewicz, with a cafe in Los Angeles' Echo Park. It focuses on organic coffees from producers it knows by name, and says it was one of the first roasters to share Regenerative Organic Certified coffee, from Nicaragua's Sacacli Cooperative. Its roasts lean bright and sweet, built for pour-over and cold brew at home.

A 1:2 dose-to-yield ratio is a common place to start. Adjust grind and taste — the roaster’s own guidance always wins.
