Meet Peace Coffee
Peace Coffee began in 1996 as a project of the Institute for Agriculture and Trade Policy in Minneapolis, set up to connect small farmer cooperatives directly with coffee drinkers. Every coffee it roasts is certified organic and Fair Trade, bought from named co-ops in Peru, Honduras and beyond, and the company is a Certified B Corporation. It still roasts in Minneapolis, where its delivery bikes are a familiar sight.

A 1:2 dose-to-yield ratio is a common place to start. Adjust grind and taste — the roaster’s own guidance always wins.
